Lightened-Up Mashed Potatoes with Caramelized Onions

Directions:                    

  1. Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium heat. Add the onions, sugar and thyme; cook, stirring occasionally, until lightly golden, 18-20 minutes.
  2. Combine the potatoes in a large saucepan with enough cold water to cover by 3 inches. Bring to a boil over medium-high heat and cook until the potatoes are fork tender, 12-14 minutes; drain.
  3. Return the potatoes to the saucepan and mash or pass through a ricer until fairly smooth. Fold in the remaining 5 tablespoons olive oil, onions, yogurt, salt and pepper.
